Farmers must be flexible to changing consumer demands since today these drive the changes in the global swine industry. A look back over the last 50 years helps us to appreciate how retail has won power within the food chain. At the same time the success of the Danes highlights how producers can survive when they have the will and ability to be pro-active on key food issues
