Metamorphosis underway in Mexico
The Mexican pork industry has three basic production systems, defined by
technology and vertical integration levels, as well as the distinct geographic
locations. The current trend towards larger and more vertically integrated pork
operations is expected to continue, with the small and mid-sized operations
losing market share.
